Shortcake with cottage cheese is baked in a slow cooker or oven.

Shortcrust pastry dough is prepared in several ways, while respecting the basic principles. Such a dough is always sweet, but not heavy. Cooking it is very simple.

Shortcrust pastry is an egg-butter mixture with sugar and flour. Butter can be replaced with spread or margarine, this will not affect the taste and texture of the dough. For splendor, baking powder or soda is added to it. Vanillin will give the dough a pleasant aroma. Shortbread dough can be prepared even in fasting, excluding eggs, and animal fat, replacing vegetable fat.

The cottage cheese filling is rather dry in itself, so sour cream, butter or whipped cream are added to it. If you add berries, fruits or jam to the filling, you can get a completely new taste. In addition, dried fruit, nuts or condensed milk are added to the filling.

Recipe 1. Shortcake with cottage cheese

Ingredients

a small packet of margarine;

vanilla sugar;

flour - three glasses;

10 ml of vegetable oil;

one and a half glasses of sugar;

four eggs;

5 g of soda;

half a kilogram of cottage cheese;

50 ml apple cider vinegar.

Cooking method

1. Sift flour onto a work surface. Gather it in a slide, make a depression in the middle and pour sugar in. Add chopped soft margarine here. Soda apple cider vinegar and add to the rest of the ingredients. Grind everything thoroughly with your hands to make small crumbs.

2. Put the cottage cheese in a bowl. Rub it with a spoon to get rid of lumps. Pour in three quarters of a glass of sugar, add vanillin and beat the eggs. Interrupt everything until smooth with a blender.

3. Lubricate the mold with vegetable oil, put two thirds of the crumbs of dough into it and spread it on the bottom, making low sides. Pour the curd filling. Top off with the remaining crumbs.

4. Put the cake in the oven for half an hour and bake at 180 C. Remove the cake from the oven and cool directly in the form. Serve the cottage cheese pie with any hot or cold drinks.

Recipe 2. Sand curd pie with jam

Ingredients

four glasses of flour;

140 g - sugar;

five eggs;

3 g vanilla sugar;

creamy margarine - 200 g;

3 g of baking powder;

thick jam - 300 g;

pack of cottage cheese.

Cooking method

1. Melt the margarine in a water bath, pour it into a suitable dish, add a little more than half the entire norm of sugar, two eggs and mix thoroughly.

2. Add baking powder and vanilla sugar to the flour. Mix. Add the dry ingredients in small portions to the egg-oil mixture.

3. Knead the soft dough and divide it into three parts. Wrap the two with foil and send to the freezer.

4. Put the cottage cheese in a blender bowl, add the rest of the sugar and add two eggs. Beat everything together until a smooth, smooth mass is obtained.

5. Lubricate the baking dish with butter and place in it a portion of the dough that you have not sent to the freezer. Stretch it to the bottom, making low sides. Lubricate the resulting cake with plenty of jam.

6. Remove one part of the dough from the freezer and rub it on top of the jam in an even layer. Put the curd filling on top and rub the last piece of dough on top.

Ingredients

margarine - 150 g;

a pinch of salt;

flour - 0.5 kg;

two apples;

2 eggs;

baking powder;

raisins - guest;

a pack of cottage cheese;

cinnamon;

60 g sour cream;

granulated sugar - 80 g.

Cooking method

1. Cut the margarine with a knife, and grind it with a spoonful of sugar in a blender. Add the yolks and continue to grind.

2. Combine the flour with a baking powder and sift it into the oil-egg mixture. We interrupt the dough into crumbs. Then we collect it into a ball.

3. Pour sour cream into the mixer bowl, pour sugar in and beat everything until sugar is completely dissolved. Now add the cottage cheese and flour to the whipped sour cream. Continue to beat until the mass becomes homogeneous.

4. Separately, whip the proteins into a dense foam. Gently introduce them into the curd mass and mix from the bottom up.

5. My raisins and pour boiling water. Steam the dried fruit for half an hour. Then we drain the infusion, and cool the raisins.

6. Put the dough into the mold, lubricating it first with oil. With his hands we distribute evenly along the bottom, forming low sides. Sprinkle raisins evenly on the cake.

starch - 80 g;

cherry (frozen or fresh) - 400 g;

Cooking Method

1. Wash the berries and remove the seeds from the cherry with a special tool or pin.

2. Combine soft butter with sugar and rub. Add the egg and rub the mass until it acquires a uniform consistency.

3. Mix flour with soda. Pour the mixture gradually into the oil and knead the plastic dough.

sugar - 120 g;

baking powder - 3 g.

1. Beat the egg in a cup, add three tablespoons of sugar and beat lightly.

2. Melt the butter in a water bath. Add oil and vanillin to the egg mixture. Rub thoroughly.

3. Pour flour in small portions, knead the dough and put it in the refrigerator, wrapping with plastic wrap, for half an hour.

4. Put the cottage cheese in the blender bowl, add two eggs and sour cream to it. Grind everything into a homogeneous mass.

5. Remove the dough from the refrigerator. Put the dough in a greased bowl and spread it on the bottom, making the sides.

Filling

vanillin;

two packs of cottage cheese;

50 g of starch;

a little more than half a glass of sugar;

3 eggs;

sour cream - 150 ml.

Cooking method

1. Add vanillin, sugar and cocoa powder to the sifted flour. Mix everything. Put the chopped soft butter in the resulting dry mixture and grind everything with your hands into crumbs.

2. Cover the detachable form with baking paper and form sides of it. Put half the crumbs on the bottom.

3. Beat eggs into separate dishes and beat everything with a mixer until splendid, adding sugar and vanillin.

4. Put the cottage cheese in a deep bowl, pour sour cream into it, add starch and beat everything with a submersible blender until smooth. Pour the egg mixture into the curd and mix.

5. Pour the curd filling onto the cake from the crumbs. Sprinkle everything on top with the remaining crumbs.

6. Put the cake in the preheated oven for an hour. Bake at a temperature of 180 C. Cool the pie, without removing from the form.

Recipe 7. Cottage cheese shortcake with bananas

Ingredients

Dough

salt;

a pack of butter;

soda;

flour - 500 g;

sugar - ½ cup.

Filling

vegetable oil;

350 g of cottage cheese;

walnuts - 10 kernels;

egg;

125 g of sugar;

two bananas.

Cooking method

1. Send the butter to the freezer. While the butter is frozen, prepare the curd filling.

2. Put the cottage cheese in a suitable dish and mash it with a fork. Add sugar to it. Mix the mass thoroughly until smooth. Grind walnut kernels with a rolling pin.

3. Combine all the ingredients for the shortcrust pastry in a deep bowl and grind everything until fine crumbs are present.

4. Grease the heat-resistant mold and place in a preheated oven.

5. Peel the bananas and cut them into thin circles. Remove the mold from the oven and put half of the sand crumbs in it. Lay the cottage cheese filling on top of it. Sprinkle everything on top with the second half of the sand crumbs. Spread banana circles evenly over the entire surface of the pie. Sprinkle with chopped nuts.

6. Put the cake in the oven and bake for forty minutes. Cool the finished cake slightly, and cut into small pieces.

Sand cheese cake - tricks and tips

It is advisable to leave the shortbread dough for half an hour in the refrigerator before baking it.

Be sure to add sour cream and a slice of butter to the filling from low-fat cottage cheese, otherwise it will turn out to be rather dry.

Do not leave shortcrust pastry near sources of heat.

To make the filling even more interesting, you can add berries, fruits or nuts to it.

It is advisable to grate the cottage cheese thoroughly through a sieve in order to make the filling homogeneous.
