Many people prefer to cook pancakes on kefir, and not on milk, because such pancakes are obtained as airy, delicate and very tasty.

The dough for pancakes on kefir should not be as liquid as for pancakes on milk. But in order to make the pancakes thin, you can add a small amount of boiled water or even mineral water to kefir. You can cook and custard pancakes on kefir - flour for this should be brewed with boiling water.

In the dough for pancakes on kefir often add soda. Soda reacts with acid contained in kefir - as a result, carbon dioxide is released. Due to this pancakes are especially porous and airy. For 1 liter of kefir you need to take one or two teaspoons of soda. The main thing - do not overdo it, otherwise the pancakes will respond with soda. The amount of soda depends on the desired thickness and structure of pancakes. Pancakes are fried like kefir, usually in vegetable oil.

You also need to melt the butter and slightly heat the kefir. If simple water is used in the recipe, it must be boiled. Eggs should be at room temperature, so they should be removed in advance from the refrigerator.

From the dishes you need a cast iron pan or a frying pan with non-stick or teflon coating. You can also use a special pan for baking pancakes, it is not necessary to oil it. You also need to prepare a clean enamelled dough basin, a whisk, a glass to determine the number of ingredients, a spatula, a ladle or a ladle, and a brush to grease the pan.
