Who does not like the classic Russian hodgepodge? I am sure that these are simply not found. After all, a hodgepodge is a rich taste, a variety of acid, an abundance of meat products, smoked flavor!

As a rule, economical housewives cook this first course only in cases when a lot of various residues of meat products have accumulated in the refrigerator. In addition to them, the composition of solyanka includes mandatory ingredients: pickled cucumbers, lemon, tomato paste, olives, and any smoked food. There is still one nuance of the classic recipe for solyanka: it should not contain potatoes, rice, pasta. In addition, lemon and olives, although essential in this recipe, are already placed directly on each plate before serving.

It must be said that the hodgepodge is entertaining in that by connecting the imagination, each time you can get this dish with a very different taste.

Ingredients:

  • pork - 200 grams,
  • pig kidneys - 2 pieces,
  • heart, stomachs - 100 grams,
  • smoked ham - 1 pc,
  • milk sausage or sausages - 200 grams,
  • Pickled, pickled or barrel cucumbers - 3 pieces,
  • onions - 1 pc,
  • carrots - 1 pc,
  • Tomato paste - 2 tablespoons,
  • Bay leaf,
  • allspice peas,
  • carnation - 2 pieces,
  • salt to taste
  • ground black pepper,
  • lemon - to serve,
  • vegetable oil - for frying.

Step-by-step recipe for making hodgepodge (with photo):

The greatest difficulties in the preparation of solyanka causes the preparation of pig kidneys. We soak them for the night, and in the morning we rinse, fill with new water and set to boil. In the process of cooking, change the water a couple more times. When the buds are cooked, cut them into cubes.

In parallel with the kidneys, we put the stomachs and the heart in one pot, which we then also cut into cubes.

Wash the pork, cut it into cubes, peel the onions and put carnations into it. Put everything in a saucepan, add bay leaf, allspice and put on the fire.

Meanwhile, cut and fry the cucumbers in vegetable oil.

We'll do the same in sausage.

Peel carrots, grate and fry.

Fried carrots, sausage and cucumbers put in a plate.

In smoked ham, separate the meat from the bone, cut it into cubes.

When the broth is cooked, put the prepared foods in it: fried carrots, sausage, cucumber, cooked kidneys, heart, stomachs and ham meat.

Cooked onions are needed only for the flavor of the broth, so we will discard the onion. Season solyanka with spices, tomato paste and mix. Cook all together for another 5 minutes and turn off the fire.

Feeding solyanka, put a slice of lemon and a couple of olives on each plate.
