Fragrant melon is always a pleasure to eat. She is an excellent dessert, which you can enjoy with pleasure all year round. After all, the melon is tasty not only fresh, but also as a preservation. It quenches thirst quite well, therefore it is very organic in compotes.

You can not only drink aromatic liquid, but also soak it with biscuit dough, pancakes, pancakes. And melon slices are appropriate to add to pies, cakes, ice cream, enjoying a summer treat among the winter cold.

Melon drinks for the winter - general principles of preparation

The melon fruits used to make a drink for the winter should be ripe, but not overripe. Inside, they have elastic and firm flesh. Otherwise, the drink will turn out cloudy and poor quality.

We wash and dry the melon. Cut the fruit in half and, armed with a spoon, remove the seeds. Then cut the melon into slices and peel it.

The pulp of the fetus is cut into medium cubes. They need to either immediately be thrown into hot water or first boil the syrup, and then load the pieces of melon and boil for several minutes. Pouring boiling sweet solution into fruit pieces placed in containers is allowed.

The following inventory will come in handy:

• glass containers and lids;

• saucepan;

• wooden spoon;

• slotted spoon;

• colander;

• a kitchen towel or thick gauze;

• a well-ground knife;

• clean cutting board;

• tablespoon.

We sterilize the washed jars either over steam or in the oven (150 degrees twenty minutes). When we will additionally heat the container with compote, then it is quite enough to simply wash it cleanly.

We fill the cans with the finished drink, tightly twist and turn over. For greater safety, wrap the container and send it to storage only after it is completely cooled.

1. Nectar from melon for the winter "Fragrant"

Ingredients:

• melon;

• 650 gr. Sahara;

• 20 gr. citric acid;

• litere of water.

Cooking method:

We heat the water and fill it with a sweet ingredient, and then citric acid. Cook sweet syrup.

Peel the melon. Cut the pulp into medium pieces.

Dip the melon in sugar syrup, mix and blanch for three minutes.

We overload the fruit pieces in a clean glass container. Pour it to the top with syrup.

We sterilize the cans for no more than 10 minutes and seal it tightly. It does not hurt to turn over the jars and cover with at least a towel.

After the drink has cooled, we transfer it to the room cool and dark. And do not remember the compote from the melon until winter comes.

2. Stewed melon for the winter "Fragrant drink"

Ingredients:

• melon;

• litere of water;

• half a kilogram of sugar;

• one spoon of art. citric acid (without slide).

Cooking method:

We wash and dry the melon. Cut the fruit in half and remove the seeds.

Cut the melon into slices. Cut off each peel and cut into small cubes. We place them in a deep bowl.

We prepare jars: we wash and sterilize.

Put slices of melon in a glass container. Shake the jars periodically so that the tasty cubes fit tightly.

Pour cold water into a saucepan. Pour citric acid and sugar. Mix everything and bring to a boil.

Remove the finished syrup from the fire and pour it into a glass container filled with pieces of melon. A sweet solution should be enough for four liter jars.

Cover the container with compote and cover and sterilize in a saucepan with a towel at the bottom for 15 minutes.

We twist and wrap the jars.

3. Winter melon drink with almonds

Ingredients:

• 800 gr. melons

• one kg of granulated sugar;

• 1000 ml of water;

• 200 gr. almonds.

Cooking method:

We release fragrant melon from the skin. From the pulp, cut into medium-sized cubes 2? 2 (cm).

Lay slices of the fruit in a clean jar in layers and pour a handful of almonds.

Pour sugar into the bucket, fill it with water and stir. Cook thick syrup.

Pour the prepared sweet mixture of jars with pieces of melon and almonds.

We cover with lids, put on the bottom of a wide saucepan with water and sterilize.

Then roll up, turn over and cover with a blanket.

After a day, we shift the jars with fragrant compote from the melon to a place intended for storing supplies.

4. Winter melon nectar with lemon juice

Ingredients:

• two small melons;

• water - liter;

• a pound of sugar;

• 1 teaspoon of vanilla sugar;

• two tbsp. l freshly squeezed lemon juice.

Cooking method:

We divide the peeled melon into identical and small slices. We put it tightly in prepared jars.

We boil water in a saucepan and add regular, vanilla and lemon juice sugar.

Sweet syrup cool. Pour it into jars of melon.

We sterilize the container in boiling water and close it.

Turn the jars and wrap them for a day. Then we hide in the pantry.

5. A melon drink for the winter with ginger

Ingredients:

• one melon;

• four tbsp. l Sahara;

• two slices of ginger root;

• citric acid - a pinch;

• half a liter of purified water.

Cooking method:

Rinse the melon, divide in half, and then cut into thin slices.

We take one such piece in the hand, make vertical cuts on the fruit and cut the flesh from the crust.

Peel the ginger root. Cut off several slices from it.

At the bottom of a clean liter jar, put ginger, and then add the melon cubes, stacking them tightly one to the other.

Mix sugar with citric acid. Pour dry ingredients into melon slices.

We boil the water and pour it to the very edge of the can. Minimum space should be left for air.

Then sterilize the container in a saucepan with gauze or cloth at the bottom. The time for this operation is about 15 minutes.

We get the container, tightly close the lid.

Turn over and cover with a blanket or blanket. Do not touch until completely cooled.

We hide the compote with melon in a cool place until the occasion.

6. Stewed melon for the winter with spices

Ingredients:

• one kg of already peeled melon;

• two mugs of lemon;

• a small piece of peel from an orange;

• two cloves;

• a centimeter slice of cinnamon sticks;

• two and a half glasses of water;

• citric acid - five grams.

• 0.65 kg of sugar.

Cooking method:

Pieces of melon are placed in a deep bowl.

Pour sugar with citric acid into a liter jar, mix. Fill it with water and stir everything again.

Pour the solution into pieces of melon and leave for a day.

Drain the water in a saucepan and bring to a boil.

We load pieces of melon and boil them until transparent.

We take out the fruits with a wooden spoon or slotted spoon and lay them in dry, clean and warm jars.

Put the lemon and spices on top.

We bring the syrup to 100 degrees, then fill it in jars.

We twist the container lids, turn over. Spread something warm on top. After the banks have cooled, we place them in the pantry for storage.

7. Winter melon drink with plums

Ingredients:

• three hundred gr. melons

• sugar - 1 cup;

• ten plums;

• three glasses of water;

• 50 gr. sweet grape wines;

• citric acid - 10 grams.

Cooking method:

Cut the melon into pieces.

We remove the stone from the plums.

Cook the syrup by loading sugar into hot water. Dip the pieces of plums into it and bring to a boil.

Let the syrup cool and pour the wine into it.

Add melon slices and citric acid.

We wait until the compote boils, and immediately pour into jars and roll up.

Then we proceed as standard: turn over, wrap up and after 24 hours we hide in a secluded place. We open the drink not earlier than the winter days.

8. Stewed melon for the winter "Assorted"

Ingredients:

• melon - 100 grams;

• apples - 80 gr.;

• two tight and juicy plums;

• half a liter of purified water;

• sugar - four tbsp. l ...

Cooking method:

Cut the melon into slices.

Peel the apples, remove the seed box. We take out the bones from the plums.

Pour apple peel with boiling water and boil for about fifteen minutes.

Then we filter the broth and pour sugar into it. Bring to a boil.

We put apples in the broth and cook for five minutes.

Add plums, in a minute - pieces of fragrant melon. Boil another 120 seconds and put vegetables and fruits in sterile jars.

Pour the liquid part of the compote into a glass container and twist.

9. Winter Melon Nectar “Refreshing”

Ingredients:

• one kg of melon (prepared pulp);

• 450 gr. wild strawberries;

• 600 gr. granulated sugar;

• four and a half glasses of water;

• sprigs of mint.

Cooking method:

At the bottom of clean jars, put a mint branch.

We wash and dry strawberries.

Cooking sweet syrup. When it boils for about five minutes, we lower a colander with pieces of melon into it. Boil for about three minutes and unload in clean jars.

Strawberries are distributed among the banks.

Heat the sweet syrup to a boil and pour it into a container.

We sterilize the jars with compote and spin. We put upside down and cover.

After a day, we transfer the canned drink to storage in a quiet and dark room.

It is advisable to drink such a compote cold, you can even add pieces of ice.

Melon drinks for the winter - tricks and tips

  • We must not forget about the wayward character of the melon. In particular, risking to combine pieces of the fetus with milk, digestion problems can be expected with almost one hundred percent probability.
  • Melon seeds can be used to good effect. The use of them in crushed form increases male strength.
  • The amount of sweet ingredient can be changed depending on taste preferences.
  • Before use, glass containers should be checked for chips and cracks.
  • Sterilizing jars you need to be careful and very careful: they can easily burn. It is worthwhile to arm yourself with kitchen gloves or mittens, wear a tight apron.
  • The temperature of the water in the pan and inside the cans at the beginning of the sterilization process should be approximately the same.
  • Melon compote can be prepared with other (preferably sour) fruits in arbitrary proportions.
