A quick pie with onions and eggs - the basic principles of preparation

The dough for a quick pie with onions and eggs is prepared on the basis of kefir, natural yogurt or sour cream. It can be liquid, and pies from this dough are called jellied. Half the dough is poured into the mold, the egg-onion filling is laid on top of it and the remaining dough is poured on top of it. This is the easiest and fastest way to make a pie.

A quick pie with onions and eggs can be made from puff pastry, pancakes or pita bread.

For the filling, you need to take a lot of green onions, since during the heat treatment it settles. It is washed, dried and finely chopped. By the way, green onions can be added not only to the filling, but also directly to the dough.

Boiled eggs, cool and clean. They are finely chopped or grossly rubbed. Then they are mixed with chives. Eggs can be filled. Beat them with sour cream or mayonnaise and pour a layer of green onion with the mixture. For such pies, a sufficiently dense dough on kefir or sour cream is prepared. Then it is transferred to the form and the sides are formed. A layer of onions is spread in the resulting form and poured with an egg mixture.

Recipe 1. Quick Pie with Onion and Egg

Ingredients

400 ml of kefir;

flour - 300 g;

eggs - 2 pcs.;

baking soda;

salt.

Filling

50 g of sesame seeds;

eggs - four pcs.;

a large bunch of green onions;

salt;

butter - 40 g.

Cooking method

1. Pour kefir into a suitable cup, drive eggs into it and add salt. Whisk all together in a homogeneous mixture.

2. Pour flour with soda into the mixture, and knead the dough, the consistency of homemade sour cream.

3. We sort the green onions, rinse, dry and chop them with rings. Put a handful of chopped green onions in the dough and mix.

4. Boil the eggs for the filling, cool them under running water and clean. Then three of them on a large segment of the grater. Mix the onion with eggs, salt and lightly pepper.

5. Pour half the dough into the mold. On top of it, spread the onion-egg filling evenly. Put butter sliced ​​in pieces on top.

6. Carefully fill the filling with the remaining dough. Sprinkle the cake with sesame seeds. We put the form in the oven for forty minutes. Bake the cake at 200 C until the top crust is browned. Cool the finished cake, remove it from the mold and cut into slices.

Recipe 2. A quick pie with onions, eggs and chicken in a slow cooker

Ingredients

green onions - 200 g;

70 g of cheese;

150 g of chicken breast;

salt;

five eggs;

soda;

150 ml sour cream;

baking powder bag;

a glass of flour.

Cooking method

1. Hard boil two eggs, cool under running water and clean. Pour the chicken breast with cold water and set to simmer until tender. Remove the prepared meat from the broth, transfer to a separate plate and refrigerate.

2. Drive three eggs into a deep cup, add sour cream and salt. Whisk until smooth with a mixer.

3. Sift flour a couple of times and mix with soda and baking powder. Gradually pour the egg-kefir mixture into the flour and mix thoroughly until the mass becomes homogeneous and smooth.

4. Rinse the green onions, dry them slightly and chop finely. Coarsely boil eggs. Cut the boiled chicken breast into small pieces. Combine everything in a deep bowl, salt and pepper. Mix everything thoroughly.

5. Transfer the filling into the dough and mix until smooth. Pour the resulting mixture into a malt cooker bowl, oiled.

6. Activate the slow cooker in the "Baking" mode and cook the cake for 65 minutes. Sprinkle finely grated cheese a few minutes before the beep. Cool the finished quick pie with onions and eggs directly in the cup, then take it out and cut into slices.

Recipe 3. Quick Pie with Leek and Eggs

Ingredients

two stalks of leek;

salt;

400 g puff yeast-free dough;

black pepper;

40 g butter;

sugar;

fresh greens;

three eggs;

nutmeg;

100 ml cream.

Cooking method

1. Wash the leek, dry and cut into rings. Put chopped onions in a pan with melted butter, pepper, salt and lightly sprinkle with sugar and nutmeg. Simmer, stirring constantly, until cooked over low heat.

2. Defrost the puff pastry, roll it out and put it into the mold, while not forgetting to make the sides. Paste the dough in several places with a fork. Cut a circle of parchment along the diameter of the bottom of the mold. Put it on the dough and cover with beans or peas. Send the form to a preheated 180 ° C oven for a quarter of an hour. Take out the finished base and cool.

flour - 300 g;

soda;

creamy margarine - 130 g;

sour cream - 125 ml.

Filling

a bunch of dill;

mayonnaise - 50 ml;

three processed cheese;

three eggs;

three onions;

egg white.

Cooking method

1. Grate the creamy margarine on a medium grater. Add to it flour with soda and sour cream. Knead a soft, smooth dough, wrap it in plastic and send it to the refrigerator for half an hour.

2. Peel the onions and finely crush them. Put the chopped onion in vegetable oil and sauté over low heat until golden brown.

3. Beat the eggs with a mixer until foam appears. Finely grate the processed cheese (before placing them in the freezer). Chop the dill.

4. Put in beaten eggs with cheese, dill, fried onions and mayonnaise. Stir everything until smooth.

5. Remove the dough from the refrigerator, divide it into two parts, one of which should be larger. Roll out the bulk and shift it into shape, forming the sides.

6. Pour liquid filling onto the resulting cake. Cover it with a cake of rolled small portion of the dough. Prick the top cake with a fork, fasten the edges and grease the surface of the cake with yolk.

1. Sort green onions, rinse, slightly dry and chop with ringlets.

2. Fry the onion in olive oil, stirring constantly, until soft. Pepper and salt.

3. Pour kefir into a deep bowl, beat two eggs into it and beat everything until smooth with a mixer.

12 g of yeast;

Cooking method

1. Preheat the oven to 200 C. Heat the milk to a warm state and dissolve the yeast in it. Leave for a while to let the yeast begin to work. Then pour ghee into the milk, salt and, adding a little flour, knead a smooth, soft dough.

2. Spread the dough with a thin layer along the bottom of the mold, while forming low sides. Cover the mold with a towel and leave to rest.

3. Peel, wash and chop a quarter with rings. Fry the onion in butter until golden brown, stirring constantly so that it does not burn. Rub the cottage cheese through a sieve and mix it with cream. Beat lightly, add the fried onions, mix and cool. Then add the rest of the ingredients and mix again.

4. Put the filling on the approached dough and evenly distribute it on the bottom. Put the cake pan in the oven and bake for 20 minutes. Remove the quick pie with onions and eggs from the oven, cool and serve with dairy products or compote.

Recipe 7. Quick pie with onion, egg and two varieties of cheese

Ingredients

onion head;

60 g chopped parsley;

two stalks of green onions;

black pepper;

100 ml of olive oil;

baking powder;

50 g butter;

hard cheese - 125 g;

half a glass of flour;

300 g feta cheese;

salt;

200 ml of sour cream;

eggs - four pcs.

Cooking method

1. We clean onions. Sort green onions, rinse and dry. One and the other kind of onion shred rings.

2. Pour a spoonful of olive oil. Fry the onion in a mixture of olive and butter. Fry, stirring constantly, for about ten minutes. Transfer the onion frying to a plate and cool.

3. In a deep cup, break the eggs, add sour cream, crumbled feta cheese and part of the grated hard cheese. Beat the mixture with a whisk.

4. Pour flour with baking powder into the mixture, add onion frying and chopped parsley. Pepper, salt and mix.

5. Lubricate the mold with high sides with butter, put the dough into it and grease its surface with the remaining olive oil. Sprinkle with grated hard cheese and bake for forty minutes at a temperature of 180 C. A quick pie with onions and eggs are cut into portions and serve immediately.

  • Before sending the cake to the oven, let it rest for about half an hour.
  • Put only the yolks in the dough, then the cake will turn out friable and tender.
  • After the cake is baked, turn off the oven, and let it cool without removing it from the oven.
  • Add vegetable oil to the dough, then your pie will keep fresh longer.
