Meat with mushrooms - general principles of preparation

With the advent of the multicooker in our kitchens, the cooking process has become much easier, and now it’s not difficult to cook any dish, all the more thanks to this “miracle machine” it’s just impossible to spoil the dish, the ingredients will not burn and digest, and the cooked products will retain their color and taste. But to make the dish really tasty, you need to carefully select the source products.

For cooking meat with mushrooms in a slow cooker, any type of meat is suitable: pork, beef, lamb and even horse meat. The meat of young cattle should be purchased, the old, sinewy one will turn out not so soft and juicy, and besides, it takes much longer to cook.

Mushrooms are used mainly in greenhouses, as there is practically no fuss with them, it is enough to simply rinse and dry them slightly, and they are ready to cook. If you decide to take forest mushrooms, be sure to pre-boil them in slightly salted water for 10 minutes. Dried mushrooms are also suitable for cooking - they will need to be soaked in cold water for 30 minutes.

Additional ingredients of the dish are sour cream, tomato paste, spices, herbs. As a side dish for meat with mushrooms served vegetables, cereals, pasta.

If you want an independent dish, for which there is no need to prepare a side dish, you can add absolutely any vegetables - potatoes, zucchini, tomatoes and others in the cooking process. Cooking time will take about the same, but in the end you will get a full meal.

Recipe 1. Meat with mushrooms in a slow cooker

Ingredients:

• 1.2 kg of beef tenderloin;

• 800 g of fresh champignons;

• 120 g of bacon;

• 30 ml of vegetable oil;

• to taste salt and ground pepper;

• 3 tablespoons of flour;

• 3 tablespoons of tomato paste;

• a teaspoon of dried thyme;

• liter of dark beer;

• a glass of beef broth;

• eight heads of shallots;

• five medium carrots;

• three to four potatoes.

Cooking method:

1. Set the "Baking" or "Frying" mode, pour the vegetable oil into the bowl, put the bacon cut in small slices. Fry until fat is completely melted out of bacon.

2. Spread chopped shallots, grated carrots, fry, stirring, until soft.

3. Add mushrooms chopped in large strips, continue to fry.

4. As soon as excess moisture evaporates from the mushrooms, add the flour, mix.

5. Put the tomato paste, thyme, ground pepper, salt the dish.

6. Rinse the beef tenderloin and cut into small pieces, spread to vegetables and mushrooms.

7. Pour in beer and broth, simmer, setting the mode "Extinguishing" 1.5 hours.

8. Peel the potatoes, cut into slices, add to the meat with mushrooms in a slow cooker. Cooking another forty minutes.

Recipe 2: Meat with mushrooms in sour cream in a slow cooker

Ingredients:

• kilogram of veal;

• 200 g of fresh mushrooms (chanterelles, honey mushrooms);

• a glass of beef broth;

• half a glass of white wine (dry);

• 40 g flour;

• a tablespoon of Dijon mustard;

• vegetable oil;

• 80 g of tomato paste;

• 250 g sour cream;

• 20 g of ground paprika;

• to taste salt and pepper;

• parsley leaves.

Cooking method:

1. Wash the mushrooms thoroughly, boil for 5-10 minutes in slightly salted water, put them in a colander and cool. After spread in a multi-cooker bowl, add a spoonful of vegetable oil. Fry in the mode "Frying" / "Baking" until the moisture evaporates.

2. On the stove in a dry frying pan, add the flour until a pleasant golden hue.

3. Pour the flour to the mushrooms, add paprika, ground pepper, salt, sour cream, tomato paste and mustard there, mix thoroughly.

4. We wash the veal, dry it with paper towels, cut it into thin steaks, slightly beat off each piece.

Recipe 3: Meat with mushrooms and spices in a multivark

Ingredients:

• two kilograms of young beef;

• 50 ml of vegetable oil;

• large onion;

• 600 g of fresh champignons;

• two liters of meat broth;

• 150 ml of red dry or semi-dry wine;

• to taste salt and pepper;

• two tablespoons of corn starch;

• 30 g Worcester (sweet and sour) sauce;

• 30 g of brown sugar;

• 10 g of dry mustard;

• a teaspoon of dried basil and thyme, garlic powder.

Cooking method:

1. Wash a piece of beef, dry with a towel, cut into slices with sides no more than 5-7 cm. Sprinkle the stew with salt and pepper, put into a multi-cooker bowl.

2. Peel the onion and cut into rings, cut the mushrooms into slices. Fry both ingredients in hot oil until golden brown, transfer to meat in a multicooker pan.

3. In a small container, mix the wine with brown sugar, mustard, basil, thyme and garlic powder.

4. Pour meat with mushrooms in a slow cooker with broth and spicy wine, mix.

5. Set the "Extinguishing" mode for 3 hours.

6. After time, open the lid, ladle and pour into a small container a little spicy broth sauce. Mix it with starch and sweet and sour sauce. Ingredients:

• 500 g of young beef;

• 450 g canned chopped champignons;

• to taste salt and pepper;

• Bay leaf;

• 30 g of tomato paste;

• 80 g sour cream;

• onion, carrots;

• flour;

• vegetable oil.

Cooking method:

1. Cut the beef into small pieces, salt, pepper, roll in flour so that it only sprinkles the meat lightly.

2. Pour two tablespoons of vegetable oil into the multicooker pan, heat it up in the “Baking” mode, then put the prepared meat. Fry, stirring ten minutes.

3. Peel the vegetables, rub the carrots, chop the onion. We spread both ingredients for meat, fry all together for another ten minutes.

4. Add sour cream, tomato paste, canned mushrooms, mix everything thoroughly.

5. Pour a glass of boiling water, put the leaves of laurel.

6. Prepare the dish by setting the "Stew" program for 1 hour 20 minutes.

7. Before serving, mix the meat with mushrooms well.

Recipe 5: Meat with mushrooms and potatoes with cheese in a slow cooker

Ingredients:

• a pound of pork;

• a pound of champignons;

• a pound of potatoes;

• four small onions;

• two large tomatoes;

• 50 g of mayonnaise;

• 200 g of cheese (Dutch or Russian);

Cooking method:

Ingredients:

• 500 grams of pork (neck);

• 250 g of mushrooms;

• young zucchini;

• four potatoes;

• onion;

• two tomatoes;

• two cloves of garlic;

• large carrots;

• Bell pepper;

• to taste salt, laurel and spices;

• vegetable oil, fresh herbs.

Cooking method:

1. Wash the meat and cut into small slices.

2. Peel the onion and carrot, cut the onion into half rings, carrots with thin strips.

• Cooking time in recipes is approximate, since a different model of a multicooker has its own power. But the difference is usually insignificant: 10-20 minutes.

• Pre-slightly beaten meat will be more tender and juicier.

• Before cooking, meat must be completely thawed, otherwise its taste will not be so rich and gentle.

• Try to cut all products into pieces of the same size to cook them evenly.

• Greens will give the finished dish a summer freshness and aroma.

• Meat with mushrooms is served hot, with the heat of the heat, the cooled dish loses its taste.

• Water is often used to prepare a dish; if it is replaced with broth, the meat with mushrooms will turn out juicier and tastier.
