In the days of the USSR, it was impossible to purchase turkey pork in a retail chain. Only a trusted grandmother in the village, but not everyone managed to find such a supplier. Therefore, rarely in what family did they prepare dishes from this bird. At the same time, an opinion was formed that turkey meat is tough and has a specific smell and taste.

This is not true! Turkey meat is not much different from the usual chicken for us. In terms of taste, it is tender, tasty, dietary, hypoallergenic meat. Perfect for any gourmet - whether it is a one-year-old toddler, a girl on a diet, an elderly person or a physically working man.

Turkey is friendly with any spices and additives, vegetables and side dishes. If a piece of pork and turkey meat lay next to each other in taste, only a sophisticated gourmet can distinguish them.

Turkey with vegetables: general cooking principles

You can buy poultry in the meat departments of supermarkets, or in a proven farm or with your grandmother in the village. In the first case - you get already cut meat - you want fillet, wings, thighs or chicken legs. In the second case - in the best case, a carcass without feathers weighing 8-12 kg. To cut the bird, the hostess will need a strong man with a cooking hatchet.

To cook turkey with vegetables you will need:

• poultry fillet or femur;

• whole turkey - if the plans are a baked bird in the oven;

• any seasonal or frozen vegetables - garlic, zucchini, eggplant, pumpkin, celery root, onions and carrots;

• spices, spices to taste or according to the recipe;

• pan or stewpan with a thick bottom;

• stove or oven;

• knife;

• spoon;

• cutting board.

For some recipes with meat you will need to remove the skin and cut it into portions. For others - for example, a turkey thigh tournado - the skin cannot be removed and the flesh is not cut.

A bird prepared according to this recipe will be appropriate for home dinner and for a festive feast. The dish turns out bright, harmonious and non-nutritious. Vegetables come as a light side dish.

Ingredients:

• 500 g turkey fillet;

• 400 g of tomato juice or mashed fresh tomatoes;

• 2 tsp. mixtures of "Italian" or "Provencal herbs";

• 1 large carrot;

• 1 large onion;

• 2 tbsp. l refined sunflower oil;

• 100 g of fresh or frozen peas;

• 100 g of green beans;

• salt pepper;

• pan or stewpan with a thick bottom.

Cooking method

1. Cut turkey fillets into portions, salt, pepper, sprinkle with herbs Italian cuisine. If the finished mixture does not suit you, then use any fragrant spices - basil, tarragon, thyme, oregano, marjoram.

2. Leave the meat for half an hour for marinating.

3. Cut carrots into cubes, onions into 5x5 mm cube.

4. In a stewpan or pan, heat 2 tbsp. l vegetable oil and fry the turkey fillet until golden brown.

5. Add onion, carrot to frypot and fry for 5 minutes.

6. Pour turkey tomato juice and leave to simmer on a small fire for 15 minutes from the moment of boiling. Do not forget to stir occasionally.

7. Add peas and asparagus beans and simmer another 5 minutes.

Serve a turkey with vegetables on the table either as a separate dish or with a side dish of mashed potatoes or pasta. Garnish with parsley leaves if desired.

Green beans can be replaced with ordinary boiled beans - get a new tasty and satisfying dish.

Turkey stew with vegetables. In tomato and cheese gravy

Cheese will give the dish a creamy piquant shade. If you want to give the dish a unique, festive note, then use any hard cheese with a bright taste - Poshekhonsky, Gruyere, Parmesan. Blue cheese will add French flair. Well, if you need a democratic option, then use your favorite processed cheese.

As a base, use the previous recipe "stewed turkey with vegetables in tomato sauce." 10 minutes before the end of the stew add 200 g of hard or processed cheese. Stir until the cheese is completely dissolved. Stew for 5 minutes.

Served on slices of toasted bread, with any side dish and just like that.

Braised turkey with vegetables and sour cream. Ukrainian classic

Sauce with sour cream gives the dish a delicate creamy taste, and mild sourness will add spice and soften the meat.

Ingredients

• 500 g turkey fillet;

• 4 tbsp. l sour cream - fat content at your discretion;

• 1 large onion;

• 1 large carrot;

• 1 large bell pepper;

• 2-3 large tomatoes;

• 200 g of cauliflower;

• 200 g squash or zucchini;

• salt pepper;

• 2 tbsp. l refined vegetable oil;

• favorite herbs.

Cooking method:

1. Meat cut into arbitrary pieces, salt, pepper, add spices.

2. Cut vegetables into small cubes.

3. Blossom cauliflower inflorescences for 1-2 minutes.

4. Tomatoes, it is desirable to remove the skin.

5. Fry the meat in a saucepan.

6. Fry onions, carrots, peppers separately, add zucchini and blanched cauliflower.

7. Add chopped tomatoes and stew vegetables for 5 minutes.

8. Put meat, vegetables in tomato sauce in a saucepan, add sour cream and simmer for 15 minutes.

Serve as an independent dish or with boiled potatoes.

Turkey in the oven with vegetables. Cooking in pots

In essence, this recipe is identical to the previous one. The only difference is that the turkey with vegetables is poached in the oven. This not only saves time for the hostess - the oven itself does its work, but also gives the dish some solemnity, festivity and national flavor.

The ingredients and technology are identical to the previous recipe. Fried fillet, vegetables in tomato juice, sour cream are laid in a pot. If there is little liquid, then you should add half a glass of water to each form.

Pots are sent to a cold oven. It is important not to heat the oven, as the pots for baking can burst without warming up evenly. Stew meat for 1 hour at a temperature of 200 degrees.

Serve hot - at least a la carte in the plates, even in the same pots. Rice, wheat or buckwheat porridge, boiled potatoes - any side dish will be appropriate. Here it all depends on the desire of the hostess.

French-style turkey with vegetables. Mushroom Turnado

Tornado is a stuffed roll. Any meat is appropriate for this dish - duck breast, pork, beef. The femoral part of the turkey is ideal for this. Some manufacturers do not remove the femur. This is not scary - it is easily separated from the meat with a knife. The meat will go on a tornado, and the bone will make an excellent broth.

Ingredients:

• 1 thigh of turkey weighing 800 g - 1 kg;

• 2 large onions - you can use shallots;

• 2 large carrots;

• 1 zucchini;

• 1 heavy eggplant;

• 200 g of champignons;

• 1 clove of garlic;

• salt, pepper, favorite herbs;

• refined vegetable oil.

Cooking method

1. Expand the turkey thigh, remove the bone, do not remove the skin.

2. Add salt and pepper to the meat.

3. Peel vegetables, mushrooms.

4. Fry the onion, garlic, add mushrooms. Salt, pepper, sprinkle with your favorite herbs. Fry champignons until tender.

5. Put the thigh on the board skin down. Fill the fried mushrooms with onions on the inner surface of the piece.

6. Give the turkey thigh the shape of a roll, sew up the skin with a thread and a cooking needle (you can just use a gypsy needle).

7. In a saucepan, fry the roll from all sides to a golden crust. Put aside on a plate.

8. Fry coarsely chopped onions in the remaining oil. If you use shallots, then you should not chop it - fry whole.

9. Add coarsely chopped carrots, zucchini, and eggplant. Fry vegetables.

10. Return the roll to the stewpan with vegetables. Add 1 cup of water and simmer for 1 hour.

11. When feeding, remove the threads.

You can serve it simply with stewed vegetables, but any side dish is suitable for this dish.

French-style turkey with vegetables. Tournado with plums

Turkey is willingly friends with vegetables and fruits. For the roll, you can use prunes, ordinary dried plums, fresh fruit. Plum gives meat a specific sourness and smell. If smoked prunes are used, then a characteristic smoked aroma will appear.

Ingredients

• turkey thigh weighing 800 g - 1 kg;

• 10 shallots (ordinary onions can be used);

• 3 large carrots;

• 10 prunes or 2 handfuls of dried plums, or 10 large plums;

• salt, pepper, favorite herbs;

1 glass of water;

• 2 tbsp. l purified vegetable oil.

Cooking method

1. Remove the femur, salt the flesh, pepper, sprinkle with your favorite herbs. Soak in this dry marinade for 30 minutes.

2. Peel the vegetables.

3. 1 whole carrot put on the flesh along the turkey thigh. After the tornado is ready, the carrots are removed. She completed her work.

4. Fold the meat roll, sew the skin of the bird.

5. Fry the meat in a skillet. Put aside on a plate.

6. Fry shallots whole, carrots - big bars.

7. Put a tournado on vegetables, add plums. Pour water and put out stew for 1 hour.

Serve with boiled rice, mashed pumpkin or potato, with boiled cauliflower.

Turkey with vegetables. Goulash with pumpkin and potatoes

Variation of thick Hungarian second-course soup with American and Italian notes.

Ingredients:

• turkey fillet;

• 5-6 potatoes;

• 500 pumpkins;

• 1 tsp paprika - sweet red pepper;

• thyme, basil;

• black pepper, salt;

• 1 cup broth;

• vegetable oil.

Cooking method

1. Slice the meat into large cubes and fry in a skillet.

2. Pumpkin, potatoes cut into cubes. The size of the vegetables should fit the turkey pieces.

3. Add vegetables, spices and broth to the meat. Bring to a boil, reduce heat and simmer for 1 hour.

Ingredients:

• 500 g turkey;

• 500 g broccoli;

Ingredients:

• turkey fillet or thigh - 800 g - 1 kg;

• 700 g fresh or canned tomatoes;

• 1 sweet pepper;

• 2 onions;

• 5 cloves of garlic;

• 500 g boiled or canned beans;

• zira, oregano, rosemary, hot red pepper - to taste;

• salt, black pepper;

• vegetable oil.

Cooking method

1. Peel and chop the vegetables into small cubes.

2. Cut the turkey meat into small pieces and fry.

3. Add onions, garlic, sweet and hot peppers. Cook for 15 minutes. Do not forget to stir.

4. Add mashed tomatoes, remaining spices, 1 glass of water to the stewpan and simmer for 1 hour.

5. Boil the beans, put them in a colander and send them to the turkey saucepan with vegetables. Stew for 15 minutes.

Serve hot with corn bread or tortillas.

For fans of healthy eating. With this method of processing products, all vitamins and minerals are preserved. And what is important - not a single gram of fat!

Ingredients:

• 500 g of turkey meat;

• 1 onion;

• 1 carrot;

• 300 g broccoli or cauliflower;

• salt, pepper, favorite spices;

• 2 pans of different sizes;

• steam bath water.

Cooking method

1. Slice the meat, dice the onion and carrot. Potatoes - thin circles. Broccoli or cauliflower divided into inflorescences.

2. Grease a smaller pan.

3. Lay the ingredients in layers - potatoes, onions, carrots, broccoli. The last layer is turkey meat. Each layer pepper, salt, sprinkle with your favorite herbs.

4. Put the pan with the future dish in a container with a large volume. Pour into a large pot of water. It should reach the middle of a smaller capacity.
