Potato nests with minced meat - general principles

There is nothing complicated in making nests. To begin with, mashed potatoes are prepared, for tenderness, milk, butter are necessarily added, as fastening components - flour, egg. After fried in minced meat with vegetables, mainly only with onions, and spices. Ingredients:

• 7 potatoes;

• 35 ml lean oil;

• flour - 55 g;

• egg - 1 pc.;

• 265 g of pork and ground beef;

• 5 cloves of garlic;

• black pepper, salt - 45 g.

Cooking method:

1. The peeled and washed potatoes are put in a pan with water and boiled.

2. The peeled onion head is fried in a pan with oil until light brown.

3. Put the prepared pork and beef mince in the pan to the onion, mix well and fry for another 12 minutes.

4. Minced meat with onion is salted, paprika, garlic cloves chopped in the scampi are added, mixed again.

5. Drain the water from the boiled potato, turn it into a puree pulp with the help of a pusher, salt, season with pepper and, if desired, with any spice, fresh herbs, mix thoroughly.

6. Break the egg into the potatoes and mix intensively.

7. Pour flour in the puree with the last ingredient, stir once more and set aside for several minutes.

8. A deep baking sheet is greased with vegetable oil, sprinkled with ground breadcrumbs.

11. Sprinkle cheese on top with grated cheese and place in a red-hot oven, bake a little less than half an hour.

2. Potato nests with minced meat in sour cream

Ingredients:

• potatoes - 825 g;

• minced pork - 325 g;

• 2 eggs;

• 35 g flour;

• 3 small onion heads;

• 3 processed cheese;

• sour cream of medium fat content - 240 g;

• vegetable oil - 90 ml;

• 25 g of black pepper, salt;

• a mixture of Provencal herbs - 40 g;

• 7 sprigs of parsley.

Cooking method:

1. Peeled onions are diced and spread on a hot frying pan with oil, fry for 4 minutes, often stirring.

2. Add pork prepared minced meat to the onion, add salt, season it with pepper and Provencal herbs, fry until the minced meat is ready, stirring occasionally.

3. In lightly salted water, peeled potatoes are boiled. The broth is drained, the potatoes are ground in a blender to a puree condition, flour, eggs are introduced and thoroughly mixed.

4. The frying sheet is covered with a sheet of foil.

3. Potato nests with minced meat and soy sauce

Ingredients:

• 420 g of potatoes;

• one egg;

• 30 g of wheat flour.

For filling:

• 45 ml of finished soy sauce;

• 355 g of pork and beef pulp each;

• 1 onion;

• garlic - 5 cloves;

• crushed crackers - 65 g;

• eggs - 2 pcs.;

• parsley, dill - 5 branches each;

• black pepper, salt - 35 g each

Cooking method:

1. Boil the potatoes in salted water over medium heat until soft. The broth is drained, the vegetable is pounded with a crush to a puree state, salted, seasoned with pepper, stirred well.

2. Pieces of beef and pork are peeled from the films, grinded in a meat grinder.

3. Soya sauce is poured into the prepared meat, pour a small amount of chopped dill with parsley, chopped onion, some ground crackers and squeezed peeled garlic cloves through the garlic, add salt, season with black pepper and stir thoroughly.

4. In a small plate, break the eggs, beat with a fork and introduce into the minced meat, mix again.

5. From the finished meat mass, small balls are formed, about the size of a walnut.

6. Spread the meat balls on a hot frying pan in the oil and fry in a large flame of fire from all sides for 2-3 minutes.

Ingredients:

• flour - 45 g;

• eggs - 1 piece.

Filling:

• mixed forcemeat - 465 g;

• 1 onion;

• Bulgarian pepper - 1 pc.;

• parsley, dill - 4 branches each;

• half a teaspoon of salt, black pepper.

To decorate:

• parsley - half a bunch.

Cooking method:

1. The peeled and washed potatoes are boiled in water over moderate heat for 30 minutes. They turn it into a puree-like tender mass, pour in the flour, break the egg, quickly and well mix everything with a spoon to a liquid consistency.

2. The stalk is cut off from the sweet pepper, seeds are extracted, chopped with a small square and added to the prepared mixed minced meat together with chopped onion and herbs, add pepper, salt, and mix again.

Ingredients:

• potato - 9 pcs.;

• flour - 65 g;

• 40 g butter;

• 25 g of salt.

To the filling:

• 265 g of any forest mushrooms;

• 520 g of pork and ground beef;

• 1 carrot;

• 1 onion;

• 125 g of any hard cheese;

• black pepper, salt - 15 g each

To decorate:

• 6 leaves of fresh basil.

Cooking method:

1. Boiled potatoes are turned into a puree mass using a hand blender.

2. In the puree, add butter, salt, mix thoroughly to get a thick and dense consistency. Set aside for half an hour to cool.

3. Forest mushrooms are cleaned, washed, if frozen, they are thawed, cut into small pieces, put in a small saucepan and boiled in salted water for 35 minutes.

4. Mushrooms cool and transfer to ready-made stuffing.

5. Onion with carrot is freed from the husk (peel), chop the onion into strips, carrot - on a grater for Korean salads.

Stuffing Ingredients:

• chicken drumsticks - 7 pcs.;

• 1 onion;

• 45 g of salt;

• 50 ml of vegetable oil;

• black pepper, seasoning for chicken - 55 g each.

Jacks:

• potato - 8 pcs.;

• 200 ml of milk;

• 1 egg;

• 20 g of salt;

• 75 g flour;

• black pepper - 65 g.

To lubricate the "nests":

• mayonnaise - 130 g;

• Russian cheese - 100 g.

Cooking method:

1. Wash the peeled potatoes, put in a saucepan with water, filled to half the volume, pour a pinch of salt, put on a stove with medium heat and cook for half an hour.

2. The softened potatoes are freed from the broth, pounded with a crush to a puree state, milk is poured, the egg is broken, salted, seasoned with black pepper, the flour is introduced, everything is mixed well.

3. Chicken drumsticks are washed, the flesh is separated from the bones and ground in a meat grinder.

4. Peel the onion, cut it with crumbs and fry in a pan with oil for 5 minutes over low heat.

5. Stuff the minced meat, mix and fry for another 12 minutes.

6. 2 minutes before the end of frying, add salt, pepper and seasoning to the mixture, stir well.

7. The finished filling is removed from the fire and set aside with the lid closed for half an hour.

8. Balls are formed from mashed potatoes, with their fingers they make a small hole in them, into which 1 teaspoon of minced chicken with onions is placed, gently lay out the nests on a frying sheet pre-oiled.

9. Put mayonnaise in a small cup, add chopped cheese, mix, and each nest is greased from above with this mixture.
