Kurnik is the king of all the pies. This bakery, thanks to its excellent taste and aroma, has not lost its popularity for many years. The pie is prepared from any dough, but it is especially tasty on the shortbread.

Kurnik on margarine - the basic principles of cooking

The dough for a chicken coop on margarine allows you to get tasty and satisfying pastries. Knead it on eggs, sour cream or kefir. The pie from this dough is soft and retains freshness for a long time.

The classic chicken dough on margarine is kneading from eggs, margarine, flour and water. To do this, take out the margarine from the refrigerator, cut into slices and leave it to become soft. Sift the flour through a sieve and combine it with margarine. Hands grind everything to the state of crumbs. Eggs are driven into the mixture and a little cold water is added. Knead the dough until it becomes uniform and elastic.

It is advisable to send the finished dough for at least half an hour in the refrigerator, wrapping it with foil.

The main ingredient of the filling is chicken. In addition, vegetables, rice, eggs and other ingredients are added to it.

Pie is formed in layers, or made from a dough base, spread the filling on it with a slide, cover with a second layer of dough and tightly pinch the edges. Be sure to make a hole on top into which the broth is poured so that the cake does not turn out to be dry.

Recipe 1. Classic dough for a chicken margarine

Ingredients

flour - half a kilogram;

common salt;

cream margarine - 300 g;

drinking water - 20 ml;

two chicken eggs.

Cooking method

1. Margarine in advance we listen from the refrigerator. Cut it into slices and place in a deep bowl. Leave it to become soft.

2. Sift the flour through a sieve and mix with salt. We pour it into margarine and quickly rub it with our hands until a homogeneous small crumb is obtained.

3. In the resulting mixture we drive in the eggs and pour in drinking water. Mix all the ingredients with a spoon, and then knead the dough with your hands until an elastic, uniform structure is obtained.

Recipe 2. Dough for chicken on margarine and milk

Ingredients

250 g cream margarine;

four stacks. flour;

150 ml of homemade milk;

kitchen salt;

baking powder bag;

10 g of white sugar;

6 g of baking soda;

two yolks.

Cooking method

1. Sift flour through a fine sieve. Add baking powder to it.

2. In a separate plate, combine the yolks with sugar, soda, soft margarine and sugar. Rub all ingredients thoroughly until smooth. Now pour in the milk and stir.

3. Without stopping stirring, gradually introduce a mixture of flour and baking powder. Knead a fairly steep dough with your hands. It should turn out elastic and not stick to the palms. Wrap the dough in foil and place in the cold for 10 minutes.

Recipe 3. Dough for chicken on margarine and sour cream

Ingredients

4 g of baking soda;

flour - half a kilogram;

one egg;

kitchen salt;

100 g of sour cream;

100 g margarine;

30 ml of milk.

Cooking method

1. Break one egg into a cup. Stir thoroughly with a whisk or fork.

2. Add sour cream to the egg mixture, stir until smooth.

3. First remove the margarine from the refrigerator and leave it to become soft.

4. Pour milk into the sour cream-egg mixture and mix. Now add soft margarine and grind everything with a whisk until smooth. Add baking soda and salt. Stir.

5. Sift the flour several times and add to the rest of the ingredients. Start mixing with a spoon, and then knead the dough with your hands. Put it in a plastic bag and place in the cold for half an hour.

Recipe 4. Dough for a chicken pot on margarine and kefir

Ingredients

kefir 3.2% - a glass;

flour - 700 g;

creamy margarine - 150 g;

white sugar - 35 g;

eggs - two pcs.;

vinegar - a few drops;

salt - 10 g;

baking soda - a pinch.

Cooking method

1. Beat eggs into a cup, pour white sugar to them and shake everything with a whisk or fork until splendid.

2. Add salt to the egg mixture. Quench soda with vinegar and also add to eggs. Melt margarine and refrigerate. Pour into other ingredients and mix until smooth. Pour in kefir and mix.

3. Sift the flour several times through a fine sieve. Introduce it in small parts into the liquid mixture and knead the soft dough. Put it in a plastic bag and send at least an hour in cold oil. From the finished dough, form a kurnik.

Recipe 5. Chicken on margarine with rice

Ingredients

dough on margarine;

chicken carcass - half;

onions - 400 g;

salt;

broth - a glass;

ground black pepper;

six eggs;

30 g of oil drain.

Cooking method

1. Prepare the chicken dough on margarine according to any of the above recipes.

2. Rinse half the chicken carcass, place in a pan with purified water, salt and place on a fire. Add the peeled onion to the pan and cook the meat until cooked.

3. Remove the chicken from the broth, cool and separate the fillet from the bones. Grind it. Peel the rest of the onion and crumble in small cubes.

4. Pour vegetable oil into a roasting pan and heat over medium heat. Put the onions in it and fry, stirring, until transparent. Now add the chicken meat, season lightly with pepper and salt. Boil for half an hour by pouring half a glass of broth.

5. Following the recommendations on the packaging, boil rice. Cool and clean hard-boiled eggs. Crush into cubes. Discard the finished rice on a sieve and rinse under a stream of cool water. Combine the eggs with rice and stir. Put the butter in the rice filling and mix.

6. Divide the dough into larger and smaller parts. Roll out the bulk, put in the form, making the sides. Put half the chicken and rice toppings on the dough. Repeat layers.

7. Cover the filling with the rolled smaller portion. Tie the edges of the pie tight. Make a hole on top for steam to escape. Coat the yolk with the yolk. Turn on the oven for 200 C. Put a pie in it and bake for forty minutes.

Recipe 6. Kurnik on margarine with potatoes

Ingredients

a pound of margarine dough;

half a kilogram of chicken;

four onions;

four potato tubers.

Cooking method

1. According to one of the above recipes, knead the dough on margarine.

2. We wash the chicken fillet, we clean it from films and excess fat. We cut the meat into small cubes and put it in a deep plate. Season with salt and pepper. Mix and leave to marinate for half an hour.

3. Peel potato tubers. We wash them and grind them in small sticks. We clean onions and finely chopped.

4. Separate two-thirds of the dough and roll out. We coat the form with margarine. We put in it a layer of dough and make high sides. Put potatoes at the bottom, slightly salt. On top of the potatoes we spread the chopped onion. Put slices of pickled chicken on top.

5. Roll out the remaining dough and cover them with the filling. Connect the edges nicely and make a small hole in the center. Grease the surface with yolk. We turn on the oven at 180 C. Put the cake in it and bake for 45 minutes. About a quarter of an hour before the end of cooking, pour a little water or broth into the hole.

Recipe 7. Kurnik on margarine with mushrooms

Ingredients

the dough on margarine.

Filling:

700 g of chicken meat;

kitchen salt;

350 g fresh champignons;

parsley greens;

five boiled eggs;

a glass of rice.

Sauce:

50 g of drain oil .;

yolks - two pcs.;

30 g flour;

1/2 stack cream;

two stacks. chicken stock.

Cooking method

1. Knead the dough on margarine according to one of the above recipes. Boil the chicken over low heat until cooked. Then we take out the meat from the broth, separate the fillet from the bones and cut it into pieces.

2. Melt the butter in a saucepan, cool it and add the flour and stir well. Pour in the broth and mix until smooth. Add cream. Continue stirring so that not a single lump remains. We put the stewpan in a pot of boiling water. Cook the sauce in a water bath, stirring with a whisk, until thickened. Grind the yolks thoroughly with flour, add the sauce to them in a spoon, each time thoroughly grinding. Remove the sauce from the heat and, with continuous stirring, enter the yolk mixture.

3. Season chicken with sauce. My mushrooms and cut into cubes. In a pan, heat a spoonful of butter, put mushrooms in it and simmer over medium heat for about ten minutes, constantly stirring. Dress with sauce and lightly salt.

4. Boil rice following the instructions on the package. Ready rice seasoned with butter. Cleaned and finely chopped boiled eggs. We cut a couple of eggs in circles and set aside. Add chopped eggs to rice and mix. We also send chopped parsley.

5. Divide the dough into larger and smaller parts. We roll out the bulk and lay out in a greased form, making high sides. We lay out the filling in layers in this order: egg-rice mixture, eggs in circles, chicken, fried mushrooms. Repeat the layers.

6. Roll out the smaller part. We cover the pie with a sheet of rolled dough and fasten the edges tightly. Lubricate the baking surface with yolk. In the middle we make a small hole. We bake the chicken for forty minutes at a temperature of 220 C. As soon as the cake is browned, remove it from the oven.

Kurnik on margarine - tips and tricks

  • For the test, shave only high-quality creamy margarine.
  • It is advisable to place the finished dough for the chicken coop on margarine before use for at least half an hour in a cold place.
  • For the filling, you can use chicken breast, or the whole chicken, boiling it and separating the fillet from the bones.
  • To make the cake with a beautiful golden crust, grease it before baking with yolk.
