The basis of cabbage rolls is minced meat or other meat products, cereal (rice, millet, buckwheat, etc.), vegetables and cabbage, which are sometimes replaced with other leafy vegetables to wrap the filling. For vegetarian or lean stuffed cabbage, the meat part is replaced with products of non-animal origin, but the technological process remains the same.

Is not it, the most time-consuming step in the preparation of cabbage rolls is the preparation of cabbage leaves and the formation of semi-finished products in the form of rolls or envelopes of leaves and filling? This is the main idea of ​​cooking all the lazy dishes. It remains, without fundamentally changing the composition of the dish, to exclude the most time-consuming stages from the technological process in order to minimize the time to prepare a delicious home-made dinner. After all, the sum does not change from a rearrangement of terms.

That is, if cabbage is added directly to the filling, the taste of cabbage rolls will remain the same. True, one nuance is not enough for such a solution: the filling without cabbage “wrap” will lose its shape, will crumble in sauce and turn into stew or hodgepodge. But a small culinary trick easily removes this obstacle: you just need to add eggs, or a little flour, starch to the filling, or make a sticky porridge from the cereal. The protein contained in these products will bind the components of the filling when roasting or steaming. As a result, we get all the same semi-finished products of a cylindrical or other shape, no different in taste from ordinary stuffed cabbage.

There is another way to reduce the cooking time for cabbage rolls: you just need to lay the filling and cabbage leaves in layers in a prepared deep pan, cover each layer with sauce, bake the dish in the oven, and when serving, cut into portions, and pour over the sauce again to decorate the dish. In a word, there are no hopeless situations.

Well, no woman doubts that any woman, at least once in her life, cooked cabbage rolls according to her own recipe, or a recipe for a grandmother, girlfriend, neighbor or work colleague. Therefore, there is no need to teach the hostess to cook cabbage soup, as we have long said.

1. Lazy cabbage rolls in a pan in sour cream mustard sauce

Ingredients:

Viscous porridge, rice 200 g

Cutlet meat 800 g

Bay leaf 2 pcs.

Cabbage 300 g

Sour cream 300 g

Cooking method:

Finely chop white cabbage and onions. Cook the minced meat by combining rice porridge, cutlet meat and vegetables. Add salt, egg, spices. Mix thoroughly and beat off the mass. Form semi-finished products of a cylindrical shape, weighing 180 g each. Preheat a large pan and fry them, adding margarine during the frying process. After frying, the cabbage rolls will noticeably decrease in volume, so that they can be put all in the same pan. In a sour cream, add a spoonful of mustard, garlic, spices, mix the sauce, and pour in the fried semi-finished products. Put chopped parsley, bay leaf on top. Cover the pan. Stew until tender.

2. Lazy cabbage rolls in a pan of chicken and fried mushrooms

Ingredients:

Cabbage 300 g

Boiled rice 250 g

Vegetable oil 100 ml

Chicken fillet 600 g

Tomato sauce "Krasnodar" 400 g

Preparation Procedure:

This recipe is the most energy-efficient. Prepare the largest pan with a high side and a lid. Chop the cabbage and put half in a greased frying pan. Combine until cooked rice, fried mushrooms and chicken fillet, diced, combine in one bowl, mix, and put in a dense layer in a pan, over the cabbage, filling it to half the volume. Put the remaining cabbage on top.

Beat eggs with milk, add spices. Pour the contents of the pan with the egg-milk mixture, cover and place on a slow fire. Stew for fifteen minutes. Cut into portions, pour sweet and sour tomato sauce and sprinkle with chopped leek when serving.

Order of preparation:

Grind the pork pulp, onions and cabbage with a knife, or skip through a large grinder mesh. To the mass, add washed rice, spices. Place the container with minced meat for a couple of hours in the refrigerator to let the ingredients soak in cabbage brine. After hammering the egg, carefully beat out the mass and form semi-finished products of arbitrary shape. Fry, adding vegetable oil to the pan.

Place all the cabbage rolls in a frying pan without a handle or other suitable form, oiled. Sprinkle with grated cheese, put in a preheated oven. Brown the cheese.

Fry the flour in a pan by combining with margarine. Combine sour cream with baked milk, pour into a frying pan with flour. While stirring, bring the sauce to a thickening. If you can’t get the sauce without lumps, then wipe it through a sieve or beat the mass right there, in a pan, using an immersion blender. As soon as the bubbles appear, add chopped herbs, spices.

Serve lazy cabbage rolls, laying on washed and dried lettuce leaves. Serve the sauce separately or pour them each serving.

4. Lazy cabbage rolls in a beef pan with prunes

Products:

Cutlet meat (beef) 600 g

Operating procedure:

To make the sauce, combine carrot puree with tomato, add salt, spicy spices and sugar to taste, pour half of the water or starch into it. Bring the cooked mass to a boil on the stove. Combine the remaining liquid with starch, mix thoroughly and pour in a thin stream into boiling sauce, do not forget to intensively stir the sauce with a whisk. Give it a try. Then add chopped hot pepper and leek, chopped thinly, with ringlets.

Double the beef, prunes, bacon and garlic through a meat grinder. Add rice, egg to the mass, salt, add ground pepper. Form the semi-finished products. Pour a glass of water or broth into a deep pan. When it boils, lay the cabbage rolls and simmer until half cooked. Grind the cabbage to a state of mashed potatoes, squeeze out part of the juice to make the mashed potatoes thick. After adding the egg, mix the mass. If necessary, add flour or potato starch for thickening. With the resulting mass, stick around the prepared semi-finished products and deep-fry them, carefully lowering the cabbage rolls with a spoon into boiling oil.

Transfer the stuffed cabbage to a large dish, decorate with greens. Serve the sauce separately.

5. Lazy cabbage rolls in a pan without rice

It is known that cereals contain carbohydrates and do not contribute to rapid weight loss. How can they be replaced in a dish? That's the trick, that's nothing! Without rice and any other cereals, cabbage rolls can be no less tasty. Give it a try!

Cooking method:

Chop the cabbage, very finely. Choose a spoon with mashed potatoes from a baked apple. Feed the raw breast through a fine mesh grinder twice. Combine the ingredients by adding ground chili pepper, a dry seasoning. Salt and mix thoroughly. Divide into 150 g portions, form sausages.

Put oil in a deep frying pan, pour the broth, bring the mixture to a boil and lay the semi-finished products. Cover and simmer for about ten minutes.

Add chopped spicy greens, garlic, ginger to yogurt. Beat the prepared mixture with a blender until smooth. Pour into a pan and simmer as much.

6. Lazy cabbage rolls in a chicken liver pan with rice and stewed cabbage

Ingredients:

With semi-finished products - everything is simple. In a businesslike way, collect the remaining porridge from yesterday's dinner, rice porridge and stewed cabbage in a large total capacity. To make this dish look presentable and taste delicious in a new way, add sausages cut into small cubes. Grind the chicken liver with a blender and add to the total mass. For the mass to be sufficiently viscous and to form cylinders or balls from it, add an egg. Now mix thoroughly. Try to fist the cooked mixture. If it is not viscous enough, add a little flour or starch, mix again and make semi-finished products of any shape. Lubricate the frying pan without a handle, cover with breadcrumbs and lay the lazy cabbage rolls. Put them in the oven for 15 minutes. Bake at 200 ° C.

Cook the sauce in another pan. Grated carrots and onions, chopped into small cubes, passer in a preheated bowl, adding flour. When the vegetables are soft, add sour cream and tomato paste. After a couple of minutes, add spices and herbs. Stew for another 5-7 minutes. Pour the sauce with lazy cabbage rolls, then darken everything together in a hot oven, in the cooling mode. Sprinkle with greens again and serve.

Lazy cabbage rolls in a pan - useful tips

  • Stuffing for stuffed cabbage gives fat. Use bold meat for lazy cabbage rolls, or add animal fat to lean foods. If you cook a lean dish, then you can add juiciness to the cereal mass by adding vegetables.
  • The cooking time for cereals is approximately 15-20 minutes, and pearl barley is cooked for up to 45 minutes. Consider the preparation time of each of the components of the stuffing for stuffed cabbage, trying to choose its composition so that all the ingredients reach readiness at the same time.
  • In fatty and tomato sauce (gravy), the cooking time of cereals increases markedly. Therefore, try to use cereals for cabbage rolls in ready-made or semi-prepared form, especially if in combination with cereal fish mincemeat, cutlet meat, chicken flesh are used. The duration of the heat treatment of vegetables, in comparison with cereals, is not significant at all, and therefore for vegetarian recipes it will be appropriate to cook viscous cereal from cereals first, and then add vegetable ingredients to it. Moreover, viscous porridge will help to form dense semi-finished products and maintain their shape.
